Caprese Pizza (Mozzarella, Tomato, & Basil)

Last night’s dinner was really great and super simple, so I’m sharing it today! I had so much left over fresh mozzarella from when I made these caprese salad bites we decided to make a caprese pizza! It was sooooo yummy!

Caprese Salad on a Stick

We used a store bought crust since it was a busy weeknight and we had soccer and dance 🙂 Of course make your own if you’d like.

All I did was drizzle olive oil all over the crust, spread out some pizza sauce, put down about 1/4 pound fresh mozzarella sliced, one sliced tomato, and a handful of basil from my garden. Salt and pepper to taste. Bake for about 10-12 min at 425 degrees.

Seriously. So. Good.

Costco has the 2 ib packs of fresh mozzarella for cheap..around $7 I think..and it’s great tasting.

Caprese Pizza

My husband who usually complains if there isn’t any meat in a meal LOVED it. Hooray a meal WIN. I did make the kids a pepperoni version 🙂

My Fancy Frugal Fall Table Setting

Fall Thanksgiving TableThank goodness for October! The weather is finally cooling down and we are excited for Fall! Today I’m sharing photos of my dining room table that’s all dressed up for the season. This year I was going for a white and cream look with some more subtle natural fall colors.

I love using things I already have including my hand painted pallet “give thanks always” sign and my painted thrift store frame to chalkboard. Last year I scored that sweet little tree pillow for $5 at Home Goods!
Thankful for Fall

I also used a majority of natural elements including a tower of pumpkins, baskets full of small pumpkins and gourds, dried purple and green hydrangeas from my own yard, and fresh white hydrangeas with orange mums. All the fresh pumpkins and gourds are from Walmart. They have great stuff this year.

This white ceramic basket can be placed in the oven and then keeps your rolls warm on the table. That’ll be perfect for Thanksgiving.

This is a sweet little ruffle table runner I sewed last week! I am so proud of it!! I’ll do a separate post later on that soon. It’s made of scrap drop cloth from my outside curtains I made this summer.

White plates are my favorite right now! I love how you can decorate for every season with them and they always have a clean fresh look. I added some pumpkins inside each bowl for a fun Fall touch.

Recipe for Pumpkin Chocolate Chip Granola Bars

Hooray for pumpkin baking season! October is here and today I’m sharing a great Fall snack that was a big hit at my house. You can feel good about serving this to your kids because it’s definitely on the healthier side for a pumpkin treat!

Last week I wrote a short article for Central Valley magazine on tips for bargain shopping discount grocery stores and used a couple real life examples from Grocery Outlet.

There were so many examples it was hard to pick just a few from this store and here are a couple nice examples: organic coconut oil and natural old fashioned oats. They really do have some outstanding steals on organic and natural foods . I love coconut oil for baking and cooking, don’t you? It’s great stuff.

Grocery Outlet Organic Deals

Pumpkin Chocolate Chip Granola Bars by LIna Darnell


4 cups oats (I used old fashioned and they were good.)

1/2 cup coconut oil

1/4 cup of brown sugar

1/4 cup Flax

1/2 tsp sea salt

1/2 cup pumpkin puree

1/2 cup honey

1/2 tsp pumpkin pie spice

1/2 teaspoon cinnamon

1/2 cup chocolate chips

Pumpkin Choc Chip Granola Bars

Directions: Preheat oven to 325 degrees. Line a 9×18 pan with parchment paper. In a large bowl mix together the oats, coconut oil, flax, honey, pumpkin, brown sugar, and the rest of the ingredients. Press the mixture into the pan and flatten it really well with a spatula. Bake for about 20 min, and take it out and press down on them with a spatula again.and then bake them for another 20-25 min. until brown. Let them cool for at least 2 hours, before cutting.

The mix of pumpkin and chocolate is perfection, and these are more on the chewy side…We had these for breakfast before school this morning too 🙂
