Ladies and gentlemen last night my very picky eater son said these exact words after eating this meal, “Thanks for the fantastic meal Mom.” What?! That has never ever happened. Ha ha Usually if a meal isn’t chicken nuggets or Pizza there’s meal time drama and complaining at my house. Spaghetti and meatballs is one meal I can count on the kids and husband loving and here is a great recipe for Parmesan turkey meatballs. I double the batch and keep some in the freezer and on busy weekday nights I can throw them in the slow cooker with spaghetti sauce and have dinner ready when we get home from soccer practice!
Perfect Parmesan Meatballs by Lina Darnell
one pound ground turkey, 1/4 cup Parmesan cheese, 1/4 cup finely diced onion, two tablespoons seasoned bread crumbs, one egg, one teaspoon dried Italian herbs, one teaspoon garlic powder, half teaspoon red pepper flakes, Salt & Pepper to taste.
Preheat oven to 400 degrees. In a large bowl combine and mix all ingredients. I like to use a potato smasher tool to mix these. Roll one inch balls and place on a baking sheet about 1/2 inch apart. Bake for 20-25 minutes until lightly brown and cooked..
Combine with your favorite sauce and spaghetti for a wonderful meal! When I can find it on sale at my grocery store, I like to stock up on this brand of gluten free quinoa pasta. It is so great tasting, gluten free, and organic.
