Hooray for pumpkin baking season! October is here and today I’m sharing a great Fall snack that was a big hit at my house. You can feel good about serving this to your kids because it’s definitely on the healthier side for a pumpkin treat!

There were so many examples it was hard to pick just a few from this store and here are a couple nice examples: organic coconut oil and natural old fashioned oats. They really do have some outstanding steals on organic and natural foods . I love coconut oil for baking and cooking, don’t you? It’s great stuff.
Pumpkin Chocolate Chip Granola Bars by LIna Darnell
4 cups oats (I used old fashioned and they were good.)
1/2 cup coconut oil
1/4 cup of brown sugar
1/4 cup Flax
1/2 tsp sea salt
1/2 cup pumpkin puree
1/2 cup honey
1/2 tsp pumpkin pie spice
1/2 teaspoon cinnamon
1/2 cup chocolate chips
Directions: Preheat oven to 325 degrees. Line a 9×18 pan with parchment paper. In a large bowl mix together the oats, coconut oil, flax, honey, pumpkin, brown sugar, and the rest of the ingredients. Press the mixture into the pan and flatten it really well with a spatula. Bake for about 20 min, and take it out and press down on them with a spatula again.and then bake them for another 20-25 min. until brown. Let them cool for at least 2 hours, before cutting.
The mix of pumpkin and chocolate is perfection, and these are more on the chewy side…We had these for breakfast before school this morning too 🙂
